Nothing complicated to create bump textures. My eyes and image software (Photoshop and illustrator). No rules after, it has to look good for the smallest file possible.

what font do you use?

I mostly use copy-and-paste font tools for quick text styling when creating mockups or labels.
For the seam lines and new Scrubs parts, I usually work with vector drawing and shape editing tools to keep the stitching clean and consistent.
