Is there a way for me to see which parts and how many of each in my project?

Yes, if the model is public you can use the Inventory tab and then click on CSV to get a list of all parts,
If the model is not public you can see in this thread how to get the csv file. https://www.mecabricks.com/en/forum/topic/85#post823
