Turn down reflective surfaces

Hi all,

As my "learn something new in lockdown" challenge, I'm attempting to learn animation in Blender using Mecabricks Lite. I'm thoroughly enjoying the process! One thing I'm not quite sure where to start in Blender is how to turn down the reflectiveness of a render. I've been using HDRI environment textures for my lighting, but found the colour of the sky for example bounces quite strongly off a lot of bricks, particularly smooth plates, and bricks reflect strongly on to each other.

Can someone point me in the direction of how I would make bricks a little less reflective?

Here is a test render I did which shows very clear reflection - this is with a subtle "studio" HDRI - if I use an outdoor HDRI image, the floor actually turns blue... I've also got some work to do on denoising, but I think there are enough guides out there that I can work that one out for myself https://ibb.co/JzhKCjL

What I would do is get mecabricks advanced. since it has imperfections. it makes the surfaces not perfectly shiny. and makes em look super realistic!

I'm just learning the basics to make sure I'm committed before upgrading. I worked out how to turn down the reflectiveness of the tiles by increasing their roughness slightly in the shader editor!
