how the heck do I change the color of a minifig or add detail? as in how do I give the minifig a face or torso detail or change the color of the gun he's holding, etc.?
Minifigure parts with designs are in their own categories. Selecting a color from the color palette while having a Minifigure part selected (you'll know its selected because the part will be a darkish red color) to change the part color. This works with other parts as well.
